Tasting Notes

This wine delights the nose with floral components, matched with bright fruits. Find pineapple and apricot within each sip, matched with the flesh of a red skinned apple - nice and crisp. A delicate sweetness is found in hints of marshmallow and spun sugar.

pairings

Pair this chardonnay with cheese, fish (halibut, cod, salmon, bass trout) and shellfish, green veggies and fresh herbs. This Chardonnay is best enjoyed outside, surrounded by family and friends.

Name

Our Chardonnay, a signature wine of Aptos Vineyard, is named De Novo, which is latin for ‘to start anew’ and commonly used in law when trials restart. We wanted to acknowledge Aptos Vineyard’s past relationship with the Chardonnay grape while highlighting that this iteration is De Novo.

Winemaker

Winemaker John Benedetti’s (Sante Arcangeli Family Wines) shines in this Chardonnay. Aged in 20% new French oak, this wine saw 100% malolactic fermentation.

Vineyard

Our fruit hails from Lester Family Vineyards in Corralitos. We are honored to use fruit from this celebrated family vineyard in Corralitos. Sitting between 400 and 500 feet elevation on Pleasant Valley Road in the Santa Cruz Mountains, fruit from this vineyard is a delight. Influenced by morning fog, temperatures rise during the day, providing excellent conditions for Pinot Noir and Chardonnay fruit.
