Winemaker is Rob Bergstrom of Sandar & Hem. Grapes were harvested early in the morning to ensure they were cold when they arrived to the winery and were gently pressed in a horizontal bladder press. After cold settling, the juice was racked off the heavy lees and was fermented at 55F in stainless steel tanks. Malolactic Fermentation was blocked to maintain the wine’s clean and refreshing texture.
